Hola Mexico! Chimichangas with spinach and mushrooms.

you a fan of Mexican cuisine, and the man probably even more. Sam August surprised that only now following the first - and certainly not the last - recipe for Mexican shares held by Shinju . Recipe
dug in one of my mini-books publisher Parragon series "Everyday ...". Often I reach them, because they are full of simple recipes, with whom can handle even the beginner cook like me. In the booklet devoted to Mexican cuisine is so inspiring dan, it is difficult to decide what cook. Today
fell on chimichangas, which is, in short, deep fried burritos.
Wikipedia says that this dish originates from the tex-mex cuisine, although it is also popular in the Mexican states of Sinaloa and Sonora. Ideas for the filling are very different, but most often appears beef, cheese, rice or chicken. My present version is meatless. For the inside hit: spinach, mushrooms and cheddar cheese with jalapeno peppers. Because if Mexico, it must be hard.

Chimichangas with spinach and mushrooms
Ingredients:
(for 4 people, I did with the pole)
- 2 tablespoons olive oil
- 1 large onion,
finely chopped - 225 g small mushrooms, thinly sliced \u200b\u200b
- 2 fresh mild green chili pepper, cleaned of seeds and finely chopped
- 250 grams of spinach leaves, torn, if you are big
- 175 g grated Cheddar cheese
- 8
tortillas - vegetable oil for frying


Heat oil in large skillet. Add onion and cook over medium heat for 5 minutes, until softened. Add mushrooms, chilli and garlic and fry for about 5 minutes, until mushrooms are gold slightly. Throw in spinach and cook for 1-2 minutes, until leaves are tender, then add cheese and mix to dissolve.
At the center of each tortilla filled portions lie down, make the edges to the center, then Close, so that the stuffing does not set sail when cooking. Heat oil in large saucepan and fry the chimichangas until golden brown for 5-6 minutes, turning in the middle of frying. Drain off the excess grease on paper towel.
